"What you enjoy doing you will end up doing well" – this applies to 100% to White Horse. It was finished in autumn 2012, the fishing lodge with the White Horse Rössl char farm in Rußbach's valley.
A big number of chars, also known as "alpine salmon" - "salvelinus alpinus", bustle here. The char is typically pale pink and can weigh up to 2kg. The outstandingly wholesome fish is especially rich in polyunsaturated fatty acids and omega-3. Not only delicious but actually healthy!
The fishing lodge offers room for good food and sociable parties for ca. 25 people. You will be indulged with fresh smoked Rössling char or delicacies from the White Horse cuisine. (please book and reserve in advance). Around the fishing lodge you will find 3 fish farm ponds.

Hospitality in the Salzkammergut is part of the locals' lifestyle. We delight our guests and indulge them with everything that our home offers. Part of this is of course the Rössling char. This outstanding fish is bred Rußbach's valley by the White Horse. It takes more than 2 years, expert care and careful, organic feed - without any chemical additives - until your Rössling can be "harvested".
You can enjoy this delicious fish in different variations on the White Horse Terrace, at Seerestaurant and in our toque-restaurant Kaiserterrasse. Smoked and filleted Rössling is available at the White Horse Shop.
It's no surprise that we couldn't imagine our weekly programme without the Rössling and legendary fishing lodge with the White Horse. Nature is the only ingredient. The saltwater in which the Rössling is pickled in gives him its aroma, the expertise hands of the White Horse landlord do the rest.
The recipe? There is none! Or is there? Our chef de cuisine Peter Dengg didn't want to miss out and visited the fishing lodge. He was impressed by what he saw and already created further ways of preparations in his head, after all, he has been awarded with 2 toques and is preeminent in his field. A re-invitation was arranged: the second part of the fish tasting took place at the chef's "territory" only a couple of days later at Kaiserterrasse Romantic Restaurant . Soused in a marinade with ginger and lemongrass the Rössling enfolded its aromas that reminded of faraway places. A different indulgence with the same base ingredient in the gorgeous atmosphere right on Lake Wolfgang.
The decision was not easy - what decision? None! The Rössling is prepared by two people that are preeminent in their fields in two different ways. Naturally hearty by the one and with that certain "je ne sais quoi" of faraway places by the other. There is no accounting for taste.
Try both variations. Enjoy the Rössling selection with the perfect drop from our exclusively Austrian Felsenkeller wine cellar and decide for yourself which preparation delights your palate more. Both are "winners" to us.
