Traditional special feature on Ash Wednesday
Culinary herring feast at the Romantik Hotel Im Weissen Rössl
Serving fish! We traditionally start the year with the herring feast at the Weisses Rössl on Lake Wolfgangsee, which has already become a fixture. Culinary delights at the highest level, regional and fresh! When it comes to ingredients, Hermann Poll and his team pay particular attention to the regionality of the selected products.
Fresh and naturally grown, this sets them apart from others and gives the dishes that special something extra. Of course, the char is indispensable at this first culinary event. This char is lovingly and naturally farmed in Rußbach and, with its incomparable taste, offers everything that makes fish lovers rejoice!

What is the herring feast?
The 'herring feast' is a traditional culinary specialty in Austria, celebrated on Ash Wednesday, the beginning of Lent. This custom symbolizes the transition from the lavish carnival celebrations to a time of abstinence and reflection.
Originally intended as a simple, meatless meal, the herring feast has evolved into a true feast over time. It centers around various fish dishes, particularly herring in diverse preparations, from classic pickled to creative, modern variations. Herring is often accompanied by other fish specialties, seafood, and seasonal vegetables.
In many hotels and restaurants in Austria, including the Romantik Hotel Im Weissen Rössl at Lake Wolfgang, the herring feast is offered as an exclusive buffet celebrating both traditional and contemporary culinary delights, thus bridging tradition and modernity. The herring feast is not only a culinary event but also a part of Austrian cultural heritage, celebrated annually in the gourmet restaurant 'Poll's Kaiserterrasse', expressing a connection to regional traditions and Lent.
