Since autumn 2012, the rustic fish hut has been inviting guests to enjoy a unique culinary feast. Enjoy fresh, home-grown fish just a few kilometres from the Romantik Hotel Im Weißen Rössl.

In the fish hut you have the opportunity to experience the rearing of our Rössling. The charming hut offers space for a maximum of 18 guests indoors and 24 guests outdoors.
It is the perfect place to discover the diversity of Rössling in a cosy atmosphere and rustic ambience. During a fish tasting, you have the opportunity to familiarise yourself with different ways of preparing char. Let yourself be inspired by the freshness and quality of this delicious fish.
Our own fish farm in the Salzkammergut region
The so-called Rössling, the Weisses Rössl's own farmed char, is a play on the words ‘Rössl’ and ‘char’. The excellent-tasting fish is reared in the Rußbachtal valley, around the fish hut in the three breeding ponds. Numerous char, also known as ‘Alpine salmon’ (‘salvelinus alpinus’), can be found there.
The freshwater fish has a delicate pink-coloured flesh and can weigh up to two kilograms. The char is organically fed and expertly cared for for two years before it can be prepared and eaten.
The fish is prepared using only natural ingredients. The char is marinated in salt water to enhance the flavour. The expert processing of the staff at the Weisses Rössl gives the freshly prepared fish its unmistakable flavour. The extremely digestible fish is particularly rich in polyunsaturated fatty acids and omega-3, which means it is not only good, but also healthy!

You can enjoy this delicious fish on the Rössl terrace, in the "Seerestaurant" and in the award-winning restaurant „Poll's Kaiserterrasse“. Each restaurant has its own style of preparation. So there is guaranteed to be the right dish for every gourmet!
Smoked char or fish from the gourmet kitchen
Whether rustically prepared in the smoking oven or reinterpreted by chef Hermann Poll with a marinade of ginger and lemongrass, the perfectly prepared Rössling will delight every fish lover. It is accompanied exclusively by Austrian wines from top sommeliers from the hotel's own wine cellar, the Felsenkeller.
