Since autumn 2012, the rustic Fishing Lodge 7.5 km from the Romantik Hotel Im Weissen Rössl has been a fine-dining destination in its own right. Enjoy fresh, specially farmed fish during your day trip or holiday at Lake Wolfgang. An absolute highlight for foodies!
At our Fishing Lodge in the Russbach valley, you can enjoy Rössling, smoked char from our own fish farm. We also delight diners with delicious dishes and meals from the Rössl kitchen, led by Herrmann Poll (advance notice and reservation required).
Whether you fancy rustic alpine hut fare, gourmet dining or multi-course meals, the restaurant kitchen at the Hotel Im Weissen Rössl promises the ultimate in indulgence.
There are 3 fish ponds around the Fishing Lodge of the Romantik Hotel Im Weissen Rössl. Plentiful char, also known as “Alpine salmon” (Salvelinus alpinus), cavort there. These char can weigh up to 2 kg. Their flesh is a delicate pink and especially rich in polyunsaturated fatty acids and omega-3. They're delicious, and healthy to boot!
The Rössling is our own specially farmed char. This delectable fish is reared in the Russbach valley. It takes over two years of expert care and careful organic feeding – with no added chemicals – before the fish can be prepared and enjoyed.
Only natural ingredients are used in our char dishes. The salt water in which the Rössling is reared gives it its flavour; the culinary prowess of the staff at the Hotel Im Weissen Rössl does the rest.
Twice a week, hotel guests can spend a lovely evening at the Fishing Lodge. The hotel's shuttle service takes you straight there. Once you get to the Lodge, it's worth taking a look at the ponds of the Rössling fish farm in the Russbach valley.
And this Fishing Lodge in the forest isn't just for hotel guests; it can also host social gatherings of up to 20 people (up to 40 when the weather is fine), offering a rustic, cosy setting and great food..
Whether cooked in a rustic smoke oven or reinterpreted by chef Hermann Poll with a marinade of ginger and lemongrass, each perfectly prepared char will delight those who love fish. Our skilled sommeliers pair dishes with exclusively Austrian wines from the hotel's own Rock Cellar.
